Recipe: Shrimp Pineapple Curry
 
I threw this together tonight with some ingredients I had laying around. I like it. :)

1 - 2 pounds cleaned deveined raw shrimp
I can coconut milk
1 cup crushed pineapple, with a little juice
1/4 cup fish sauce (you really need this much to cut the sweetness of the pineapple)
1 T sugar
2 T lemon juice
2 T red curry paste

Combine all ingredients except shrimp and bring to a boil. Add shrimp and cook until done.

Serve with steamed rice.

I frankie seafood also. And pineapples. If I didn't have the culinary abilities of a rodent I'd try making this.

Try it with pork! I think that would be good. :cheese: (I'd sear if not fully cook it before putting it into the pot though.)

I have some left-over chicken in the fridge. I'm going to try it with chicken.
